Smoked Brisket

USDA Choice whole packer brisket, 14-hour oak smoke, sliced to order. Available by the pound or full platter service.

BBQ Ribs

St. Louis-cut spare ribs and baby backs, 5-hour hickory smoke, dry-rubbed in-house. Full rack or half-rack service.

Pulled Pork

Bone-in pork shoulder, 12-hour low-and-slow smoke, pulled same morning. Scales cleanly for 50 to 500 guests.

Smoked Chicken

Whole halves or quarters, apple and pecan wood smoke, finished over live fire. Plated or buffet-line ready.

Smoked jalapeño mac, pit beans, coleslaw, cornbread, potato salad, roasted corn. All made in-house day-of.

Peach cobbler, banana pudding, smoked pecan pie, and seasonal fruit crisps. Portioned for buffet or plated service.

Smoked turkey, beef short ribs, and rotating regional cuts available by quarter. Ask about current specials when booking.
